Why wood cutting boards are better than plastic cutting boards



Wood cutting boards are often considered better than plastic cutting boards for several reasons:

  1. Knife Friendliness: Wood is softer than plastic, which means it is gentler on knife edges. This helps to maintain the sharpness of your knives longer compared to cutting on harder surfaces like plastic. The hard surface of plastic can cause knives to lose their sharp edge more quickly.

  2. Antibacterial Properties: Contrary to popular belief, wood has natural antibacterial properties. Studies have shown that bacteria do not survive as well on wooden surfaces compared to plastic ones. This is attributed to factors such as wood's ability to absorb and dry out moisture, which helps prevent bacterial growth. Plastic cutting boards can develop deep grooves and cuts over time, especially if used with sharp knives. Plastic cutting boards can be more prone to harboring bacteria in deep grooves and scratches. Even with thorough cleaning, small bits of food and bacteria can hide in these grooves, potentially leading to cross-contamination.

  3. Durability: High-quality wooden cutting boards, such as those made from maple or walnut, are very durable and can withstand years of use if properly cared for. They are less prone to deep scratches and gouges compared to plastic boards, which can develop hard-to-clean grooves over time.

  4. Aesthetic Appeal: Wooden cutting boards are often appreciated for their natural beauty and warmth. They can add a touch of elegance to your kitchen and are available in various grain patterns and finishes.

  5. Renewability and Eco-friendliness: Wood is a renewable resource, whereby wood cutting boards are made from sustainably harvested or reclaimed wood. At the end of its life, a wooden cutting board is biodegradable, whereas plastic boards contribute to landfill waste. Most plastic cutting boards are made from non-biodegradable materials, which can contribute to environmental issues.


However, it's important to note that wooden cutting boards require proper maintenance. They should be washed promptly with hot water and soap after use, and periodically treated with food-safe mineral oil to maintain their appearance and durability. Additionally, wooden boards should not be soaked in water or run through a dishwasher, as this can cause warping or cracking.


In contrast, plastic cutting boards are generally easier to clean in a dishwasher. They are also lightweight and more affordable in many cases. The choice between wood and plastic ultimately depends on your preferences, cooking habits, and priorities regarding knife care, aesthetics, and environmental impact.
